Eliza brings the warmth with her healthier takes on hearty meals (yes, even Delmonico steak). Ree adds flavor and fun with her no-nonsense kitchen hacks. Alfredo is our steak doneness guru; he’ll make sure your medium rare is medium rare. And Malik? He’s the quiet genius who keeps the site fast, functional, and panic-free behind the scenes.

We each have our style, background, and spice preferences, but we’re united by a shared love of food that feels good, tastes great, and brings people together.

Hi, I’m Eliza Russo, and if you’re here, I’m guessing you love a good steak as much as I do.

This blog started because I couldn’t stop thinking about that one perfect Delmonico steak I had at a small restaurant years ago. It was buttery, tender, full of flavor… and left me wondering, “Why can’t I make this at home without needing a culinary degree or a triple bypass?”

I’ve always loved cooking, but for a long time, I thought rich, restaurant-style meals had to be a “once in a while” thing. I’d either go all-out and feel sluggish later… or go the “healthy” route and end up with something dry and disappointing.

One day, I just got stubborn. I bought a decent cut of steak, did some research (okay, a lot of research), and tried to make my own version of that unforgettable Delmonico. The first one was rough. The second was better. The third? My friends asked if I catered.

That’s how this blog was born from my obsession with recreating steakhouse-level food in a simple way, a little healthier, and doable in your own kitchen.

Hey, I’m Ree Gallagher, and I believe steak night doesn’t have to wreck your week.

I grew up in a house where red meat was practically a love language. Sundays meant steaks on the grill, buttery potatoes on the side, and someone yelling, “Who wants the corner cut?” It was delicious… but not exactly light.

Years later, I found myself craving those meals, but also trying to eat a little cleaner, less heavy, less guilt, fewer naps after dinner. I tried swapping things out, but the flavor just didn’t hit the same. I didn’t want less, I wanted better.

Hey, I’m Alfredo Marquez, and I’m a little obsessed with getting steak just right.

You know how some people chase the perfect sourdough loaf or the fluffiest pancakes? For me, it’s all about steak doneness. That perfect moment when the center is blushing pink, the juices are sealed in, and the crust has that beautiful, smoky edge? That’s my happy place.

It started with frustration, honestly. I ruined a lot of good cuts back in the day, undercooked, overcooked, chewy disasters. One night, I served my date a “medium rare” Delmonico that was practically raw in the middle; she still brings it up.

So I dug in. Learned how temperature works. Got a thermometer. Learned to trust my fingers, my eyes, and the timing. I turned my kitchen into a bit of a steak lab, and yeah, I dragged a few friends along as taste testers.

I work in IT and web development, and over the past decade, I’ve helped dozens of bloggers (and a few very determined home cooks) turn their passion projects into solid, secure, and smooth-running websites.

My background is in systems administration and full-stack dev work, but I’ve always had a soft spot for helping creators build something that works. Not just looks good on the front, but loads fast, ranks well, and doesn’t crash during a traffic spike.

This blog? I helped set it up. From the hosting choice to the caching system, the SEO settings, mobile responsiveness, and even some custom backend tweaks, that’s my thing. I believe your content deserves a strong foundation.
